Sweet Potato Casserole

A few of you have asked for my Sweet Potato Casserole recipe. It is oh so yummy! I got it out of The Cotton Country cookbook the first year we were married. I usually double the sweet potato mixture depending on the number of people.


3 cups sweet potatoes, about 4 good sized ones
1/2 cup sugar
1/2 cup butter
2 eggs, beaten
1 teaspoon vanilla
1/3 cup milk

TOPPING:
1/3 cup melted butter
1 cup light brown sugar
1/2 cup flour
1 cup chopped pecans

Boil and mash potatoes. Mix in sugar, butter, eggs, vanilla and milk. Put in 9 by 13 baking dish. Topping: Melt butter and mix in remaining ingredients. Sprinkle on top of potato mixture. Bake 25 minutes at 350 degrees. Serves 10 to 12.

Hope you have a great holiday! We have been invited to go over to my friend Lisa's for Thanksgiving and my assignment is Sweet Potato Casserole and the dishes. Pretty easy. I'm thinking about making a big pot of gumbo for the weekend and looking forward to cutting down our Christmas tree.

I actually bake, peel, mash. I find that easier. Oil potatoes with cooking spray before baking. Aunt Barbara

Yes, but can you package that into a kit? If so, we may be in business...
